When that temperature gets too hot, the valve opens to allow more liquid to circulate to the radiator -- which, in turn, enables the liquid to cool back down to an ideal temperature. If the liquid's too cool, the valve remains closed so that the liquid remains in the engine until the engine's reached the right operating temperature.
